Notes

For an extra boost of veg, add chopped bell peppers or tenderstem broccoli to the baking dish for the final 15–20 minutes. You can also swap the chicken breast for chicken thighs as they’re super juicy and soak up the satay flavour beautifully. Any extra satay sauce in the dish? Scoop it over the rice or save it as a salad dressing the next day!
