Step 1
Once you have peeled and chopped your potatoes, add them to a pan of boiling water, followed by 2 teaspoons of salt and 3-4 rosemary sprigs. Par boil the potatoes for 6 minutes, then drain the water (no need to remove the rosemary).

Ghee is used in this recipe as the oil, this may be the secret ingredient. However, NOT a necessity, you can use the traditional duck/goose fat and oil if you prefer, but we do recommend trying ghee as it makes them crispy. Extra: we did truffle and parmesan roasties in this vid (highly recommend), if you want to do these then follow step 6, but drizzle in 2 tsp of truffle oil over the roasties followed by 4 tsp parmesan.
