Thai Red Prawn Curry

Aldi’s coconut lime prawns are great for this, but you can also use plain frozen prawns and season them yourself. Can’t find Thai basil? No problem, it’s traditional but not essential. Fresh coriander works beautifully as a garnish!

Heat the oil in a large pan over medium heat. Add the garlic and onion and sauté for 2–3 minutes until softened and fragrant. Season with salt, pepper, and 1 tbsp of the ginger.

Really tasty and easy to do. Perhaps could do with a little less coconut milk (300ml maybe?) as still quite watery but rice soaks up most of it.
